This change comes in line after the iOS 14 update enabled Google Chrome to be set as the default internet browser. The official Gmail Twitter account added a GIF that explains to users how to actually set the app as your default email app on an iOS device. To set Gmail as the default email app on iOS devices, users will first need to update the app to the latest version and open the settings menu of their device. Then, proceed to scroll down and choose Gmail. Upon doing so, choose the Default Mail App and tap on Gmail. This will then set it as the default email app within your device.
